Before I became a nutritionist, I have to say I always struggled with healthy breakfast ideas. I’d either just have some Vegemite on white toast, Weetbix, or I’d just skip breakfast altogether. As you probably guessed I wasn’t the healthiest of individuals. If you’re in the same boat as I was, struggle no more! I’ve compiled a short list of breakfast ideas to help keep you excited to get yourself out of bed for the foreseeable future.
1. Quiche Lorraine
Quiche for breakfast!? Ahhh yep! I love making a massive quiche to have in the fridge that I can easily slice up for a healthy, quick and easy breakfast. if pressed for time, you can even make a crustless quiche.
If you have a bit more time available, you can sauté some onion, mushrooms and tomatoes to have with it, and increase your daily veggie intake at the same time.
Serve it all up with a small handful of rocket and you’ll be set until lunchtime!
2. Breakfast Parfait
This is another one you can prepare the night before and minimal effort is required to get it ready in the morning. I start off by making chia pudding and pouring a layer of it in a mason jar and leaving it overnight. The next morning if I have time, I’ll add a layer of thick blueberry smoothie; I will add a layer of yoghurt, and top with my favourite toppings such as banana, dried cranberries, buckinis, hemp seeds, cacao nibs and coconut flakes.
3. Good Ol’ Scrambled Eggs!
Scramble up some free range eggs with milk of your choice, basil and oregano and a pinch of salt… (Yes, free-range eggs are actually more nutritious!) Serve it up with some nutritious, dense bread smothered in smashed avocado, a drizzle of lemon juice, maybe some smoked salmon and fried tomatoes and you’ve got yourself one kick-ass, nutritious and filling breakfast!
4. Protein Smoothie!
Smoothies are amazing because there are so many ingredients you can put into them depending on your mood and the nutrients you’re trying to increase in your diet.
One of my favourite smoothies to have when I’m in a hurry but still want a nice nutrient & protein kick is:
1 cup of almond milk (unsweetened)
1 banana
2 tsp of psyllium husks
1 tsp of ABC spread (Almond, Brazil nut, Cashew)
1 scoop of protein powder,
and sometimes if I need a caffeine hit, I’ll add some raw cacao!
– Blend and top with sunflower seeds, cacao nibs and a sprinkle of cinnamon!
Breakfast can be an awesome opportunity to set the foundation for the rest of your day. Ensure there is enough protein so that you’re not reaching for chocolate bars by 3pm, ensure you have enough nutrients in the meal so you’re not having to eat massive meals in the evening to make up for the lack of nutrients during the day, and above all, make it enjoyable! Healthy eating needs to be enjoyed, not dreaded. Food is life!!
