Muesli bars are such popular lunch box fillers, a snack people keep in their pantries. Unfortunately, the muesli bars you buy in the supermarket are usually not that healthy. Here’s a muesli bar recipe that’s not only healthy, but it freezes well so you can make a huge batch and keep them for when you need them!

Ingredients

– 1 & 1/2 cups of rolled oats

– 1/4 cup almond milk (or cow’s milk if you prefer)

– 1/2 cup of spelt flour

– 1/3 cup chia seeds

– 1/3 cup of dark chocolate, smashed up

– 1/4 cup coconut oil, melted

– 3/4 tsp baking soda

– 1/2 tsp salt

– 12-14 dates, pitted & chopped

– 1 tbsp vanilla extract

Method

1). Preheat the oven to 180 degrees Celsius 

2). Place the dates, milk, vanilla extract, chia seeds and melted coconut oil into a food processor and blend. The dates may not blend down too much, but the small chunks make the bars even nicer.

3). In a separate bowl, mix the oats, baking soda, salt and flour. Once mixed, add in your wet mixture from the food processor. Fold the mixture (you may need to use your hands) and then add in your dark chocolate bits. 

4). Line a small, square pan with baking paper, smear the mixture into the pan evenly and pack down firmly.

5). Bake for 5-10 mins or until the edges of your mix begin to brown. Take out of the oven and cut into desired shapes whilst still warm.

6). Allow to cool and enjoy.
